Thirsty Thursday - Pineapple Margarita


Buying produce is one of life’s big dilemmas. You know what I am talking about. It either gets eaten before you can even unload the groceries or it sits until it starts to grow mold and you have to throw it away. I hate wasting food so I made it my mission this summer to be more mindful about food waste. Don’t ask me how it’s going… this week has not been great for avoiding food waste in my house. Hence the reason I have a pineapple that is a few days past its prime sitting on my counter. Most of it is perfectly fine. It’s a little soft and has several brown spots but I figured it would be perfect for a cocktail! So I settled on a pineapple margarita. Here we go!

 



Ingredients


- 3 oz Pineapple Juice (I blended and strained my own using fresh pineapple)

- 1 oz Tequilla

- 1 oz Triple Sec

- Squeeze of Lime

- Sweet and Salty Rim (Optional - Recipe Below)


Mix all ingredients in your glass of choice. Add ice and garnish with a slice of pineapple dipped in the Sweet and Salty Rim. Enjoy!

It doesn't get much easier than that!



 


Recipe for my Sweet and Salty Rim:


Ingredients


- 1 tsp Sugar

- 1/2 tsp Salt

- 1/2 tsp Chili Powder

- 1 True Lime Packet


Mix all ingredients. Dip rim of glass in honey and then dip in mixture.
